Our recipe section has a range of home-style cooking and meal ideas to use those delicious organic vegetables you have worked so hard to grow. Now time to reap the benefits!

You can of course, use our recipes as a guide and tweak them to suit your own tastes. They are in the main, written by somebody who loves food and doesn't measure anything so we hope you enjoy our 'rustic' take on the selection of dishes here.  We have recipes by vegetable, fruit, nuts or herbs and soups, which are extremely versatile as well as some fabulous and inspiring Canning & Preserving recipes and information from our lovely friend at LoveJars - Rosie.

Chicken Tikka Masala

Flavoursome, spicy dish to tickle the taste buds!

  • Chicken Tikka Masala

Ingredients

  • 500-750g Chicken Breast diced or fillets
  • 1 medium chopped Onion
  • 2 Garlic Cloves
  • Coriander
  • Fresh/Ground Ginger 
  • 1 tspoon Turmeric
  • 2 tspoons Cumin
  • 1 tspoon Garam Masala
  • Red Chillies/Chilli Powder - Half to 1 tspoon depending on taste
  • Chopped Tomatoes/tinned tomatoes
  • 1 tspoon Paprika
  • 1 tbspoon Tomato Puree
  • 1 tbspoon Yoghurt or stock/cornflour if required
  • 1-2 tbspoons Olive Oil

Please note that our recipes are an approximate guideline - Quantities along with ingredients are totally adaptable to suit personal taste, consistency and density as well as portion sizes.

Method

For maximum flavour marinade your chicken in the required spices and refridgerate before cooking

Fry off the chicken in a pan with some oil, adding the onions and garlic to soften until the chicken is cooked through

If your adding fresh chillies add these now

If you haven't marinated the chicken before-hand, add your various spices to taste

Mix in your tomato puree

Add and stir in the chopped tomatoes

You may choose to add some yoghurt to help thicken the sauce and take the heat out of the spices, stir in. (Optional)

If you like it hot, perhaps use a stock cube or a spoonful of cornflower to thicken

Add water if required

Stir in some fresh or ground coriander

Let simmer for approx 20 minutes, stirring occasionally

Serve and top with a few coriander leaves and/or a few slices of chilli pepper,

Serve with rice or cauliflower rice, a nann bread, poppadoms or the accompaniment of your choice
