You can of course, use our recipes as a guide and tweak them to suit your own tastes. They are in the main, written by somebody who loves food and doesn't measure anything (Carrie) so we hope you enjoy our 'rustic' take on the selection of dishes here. A decadent way to enjoy your leeks, braised in a rich and creamy sauce to accompany your roast.
A great alternative vegetable dish to top your roast or Christmas dinner. If you want to make it extra special, you can add white wine or sherry and cream.
Please note that our recipes are an approximate guideline - Quantities along with ingredients are totally adaptable to suit personal taste, consistency and density as well as portion sizes.
1. Prepare your leeks by cutting them into long strips once they've been washed and top & tailed.
2. Melt the butter in a pan and sautee the leeks for a approx 5 minutes minutes, adding the thyme and seasoning.
3. Stir in your stock and other ingredients if you choose to use them and simmer, covered for around 10-15 minutes. (Bear in mind to allow time for alcohol to reduce if using).
4. Stir occasionally and serve when softened.
