Our recipe section has a range of home-style cooking and meal ideas to use those delicious organic vegetables you have worked so hard to grow. Now time to reap the benefits!

You can of course, use our recipes as a guide and tweak them to suit your own tastes. They are in the main, written by somebody who loves food and doesn't measure anything so we hope you enjoy our 'rustic' take on the selection of dishes here.  We have recipes by vegetable, fruit, nuts or herbs and soups, which are extremely versatile as well as some fabulous and inspiring Canning & Preserving recipes and information from our lovely friend at LoveJars - Rosie.

Beetroot Brownies

A chocolate treat using your beets!

  • Beetroot Brownies

Ingredients

  • 2-3 medium size beetroot, cooked, peeled and chopped
  • 60g Cocoa powder
  • 3 eggs
  • 100g self raising flour, preferably wholemeal
  • Tablespoon of olive oil
  • 1 teaspoon ground cinnamon
  • 75g dark chocolate, chopped up
  • 1 teaspoon of bicarbonate of soda
  • 100g of chopped dates
  • Cup of water
  • Optional extras - you can add berries or crushed nuts

Please note that our recipes are an approximate guideline - Quantities along with ingredients are totally adaptable to suit personal taste, consistency and density as well as portion sizes.

Method

Pre-heat your oven to 180c

Grease or line a rectangular or square tin with greaseproof baking paper

Mix the beetroot, eggs, cocoa powder, oil and dates in a bowl or a food mixer

Add the flour, cinnamon, bicarbonate of soda and blend until mixed well and combined

Add water if need be, stir in the chocolate 

Add the mixture to the tin and spread out evenly 

Bake for approx 20 minutes until the mix has risen and firm/bouncy to touch

Cut into portion sizes when cooled and serve with cream, icecream or a healthier option of Greek/plain yoghurt
