You can of course, use our recipes as a guide and tweak them to suit your own tastes. They are in the main, written by somebody who loves food and doesn't measure anything (Carrie) so we hope you enjoy our 'rustic' take on the selection of dishes here. A tasty start to the day, certainly a change to cereal!
Please note that our recipes are an approximate guideline - Quantities along with ingredients are totally adaptable to suit personal taste, consistency and density as well as portion sizes.
Heat the oil in a frying pan on a medium heat and soften the onions and peppers stirring
Add the garlic, paprika and cumin, stirring regularly
Add the tomatoes, tomato puree and seasoning
Let simmer and stir regularly and let the sauce thicken
Make four holes, one at a time in the mixture and break an egg into the gap
Cover the pan with a lid for a few minutes or until the egg whites are white and the yolk is runny
Serve and garnish with fresh herbs
