You can of course, use our recipes as a guide and tweak them to suit your own tastes. They are in the main, written by somebody who loves food and doesn't measure anything (Carrie) so we hope you enjoy our 'rustic' take on the selection of dishes here. Flavoursome, spicy dish to tickle the taste buds!
Please note that our recipes are an approximate guideline - Quantities along with ingredients are totally adaptable to suit personal taste, consistency and density as well as portion sizes.
For maximum flavour marinade your chicken in the required spices and refridgerate before cooking
Fry off the chicken in a pan with some oil, adding the onions and garlic to soften until the chicken is cooked through
If your adding fresh chillies add these now
If you haven't marinated the chicken before-hand, add your various spices to taste
Mix in your tomato puree
Add and stir in the chopped tomatoes
You may choose to add some yoghurt to help thicken the sauce and take the heat out of the spices, stir in. (Optional)
If you like it hot, perhaps use a stock cube or a spoonful of cornflower to thicken
Add water if required
Stir in some fresh or ground coriander
Let simmer for approx 20 minutes, stirring occasionally
Serve and top with a few coriander leaves and/or a few slices of chilli pepper,
Serve with rice or cauliflower rice, a nann bread, poppadoms or the accompaniment of your choice
